Arroz con huevo is a fast, easy way to get your carbs and proteins when you’re in a rush, but want something other than bread to fill you up. It’s one of my favorite lazy afternoon dishes. Here I added brocoli to complement with greens.
To make “arroz blanco”:
One and a half cups of water per each cup of rice (the more water you add, the stickier the rice and the longer it’ll take to cook). Salt to taste. I usually start the pot with some salt, add the rice, the water and the salt, let it boil down uncovered, then stir and simmer with cover on for about 15-20 minutes. If you are cooking more than a couple of cups, allot more time. A few minutes before serving, add another tablespoon of oil. Rice grains will look shiny and enticing.
Fried egg:
Tiny bit of olive oil, or butter, add egg, and a bit of salt/pepper to taste. Turn, seve over rice.
Broccoli:
Steam for a few minutes. Serve while still crispy with sauteeed onions and garlic.
